So for Lent (I know, it was a long time ago), I did a scary thing and gave up meat. By meat, I mean that I gave up red meat and poultry. I did not include fish during this time. I thought that it couldn’t be done, or at the very least, that I was incapable of this feat. After all, I am the Ron Swanson of the friends (I hope y’all get the Parks and Rec reference). So here I am to share some of the food from my semi-vegetarian life.

|Avocado toast with tomatoes, cilantro, and hot sauce|
This was one of my favorites because it was salty from the hot sauce and had that little kick of flavor I like from the cilantro. This bread is one of my favorite whole grain breads and than I could never go without a little avocado in my life! I was surprised at how long I was full after eating this and it was one of the best breakfasts I’ve had.
|Poached eggs with spinach, avocado, cherry tomatoes, and toast|
Again, where would I be without avocado? I added the spinach for a few more nutrients and then cherry tomatoes are a little favorite of mine. When I was a kid, I would eat them by the handful like they were candy. I also love eggs; I live off of eggs cooked in every which way. I over did the poached eggs a little bit, I like mine to be runny, but these were still good. I think this would have been even better with a little bit of basil and balsamic glaze.

I already admitted that I didn’t make this one, but it was so good! Hopdoddy’s is a burger place here in Playa Vista (aka LA) and it was one of the best black bean burgers I’ve had!

I will admit, I don’t like kale. In fact, I don’t really even like vegetables, especially the green ones. But I liked this salad, especially with the spicy peanut dressing and avocado of course.
|Peanut Butter toast with Strawberries|
This has always been one of my go-to’s: peanut butter toast. We happened to have strawberries, so I added those for the perfect post-workout snack. I usually use peanut butter powder to make my own peanut butter without a lot of the fat and sugar and then add honey for a little sweetener, but alas I just used normal peanut butter today.

I have a weakness for breakfast burritos. They are absolutely everything to me. This was no exception. The black beans are my favorite addition since they help keep me fuller for longer.

I liked the other kale salad better but, damn, did this one have a real kick to it. It’ll clear out those sinuses real fast.
|Granola and fresh fruit on nonfat plain Greek yogurt|
Again, a favorite. I love granola with fresh fruit and put it on top of some creamy greek yogurt with honey and you’ve got yourself a winning breakfast.

Last but not least, more eggs. I told you I live off of them. I’m a big fan of the Mexican flavor so more cilantro and pico de gallo made this one a winner.
