Today, I am sharing a new recipe with you all. I’ve recently come across a lot of pasta recipes, which I often don’t think of as a summer dish. But to be honest, I love pasta. Carbs are my best friend. So I’ve been brainstorming on how to give a summer twist to my favorite dish.
Here goes nothing… Zucchini noodles.
What? I thought you said you liked pasta, as in, the carbohydrate kind?
I know, I know, I do love the carbo-loading kind of pasta. But I’m trying to keep a summer body here. And I know I am not the first person to create zucchini noodles, but my mom bought a noodle maker and I had to try it out. Sure, the zucchini noodles are “healthy” but man, does this recipe make them taste so good.
I wanted something that had a kick of flavor (the roasted red peppers and cayenne pepper), just creamy enough to give the noodles a smoother flavor (the alfredo sauce), and a little hint of summer (the fresh zucchini and the grilled chicken). This this in mind, my recipe was born.
6 Fresh Zuccchinis
1 Grilled Chicken Breast cut into 1 inch pieces
1 Jar of Mezzetta Roasted Red Peppers
1 tsp Cayenne Pepper
1 Diced Onion
1/2 Cup Milk
1/2 Cup Heavy Cream
1/2 cup Parmesan Cheese
4 oz Goat Cheese
2 tsp Garlic
Parsley for garnish
