Buffalo Chicken Tacos

I love Frank’s RedHot probably more than I should; it’s seriously the perfect combination of flavor & heat. I Put That $#!+ On Everything! In fact, I always have to keep a bottle in my fridge for easy recipes just in case! Frank’s RedHot Buffalo is also perfect in a wide variety of recipes for Summer! Frank’s RedHot Original is the most versatile sauce that can be used for a wide variety of dish types. As I mentioned before, I almost always have a bottle on hand in my fridge. Normally, I use the original to make an Asian-inspired baked chicken, but I ventured out for this recipe – I used the Frank’s RedHot Buffalo.

I’d actually never used the Buffalo sauce before this, but since I was such a fan of the original, I thought there was no way I could go wrong. Of course, I was right. This recipe is super simple – it doesn’t require much more than Frank’s RedHot! This is such a simple application too – it can be used in so many more things! You could try making some simple Buffalo wings (or another flavor if you want to get fancy!), Buffalo Chicken sandwiches, Buffalo dip… The list goes on! I recently got my hands on a Buffalo dip recipe that you can bet I’ll be trying soon.

This recipe easy combines a twist of Latin flair with the traditional buffalo flavor – making it an instant hit at any party. You can even serve it as a salad if you want to forego the tortillas! My boyfriend and I enjoyed the tacos by the pool yesterday and will be enjoying the rest as leftovers as a salad today!

If you’ve been following my blog for a while, you know that I will be staying in Tucson over the summer. With Memorial Day coming up, I plan on lounging by the pool with my tacos and tequila in hand. You can bet I’ll be catching some much needed sun. However, my family is back in Los Angeles, so it will also be the perfect weekend to take an afternoon off early to go home and see the family. There is no better, or more traditional way, to celebrate a holiday than being with the ones you love.

Buffalo Chicken Tacos

Instructions
  1. In a large pot, cover the chicken breasts with water until just covered.
  2. Bring the water to a boil and cook until cooked throughout, about 10-12 minutes.
  3. Once the chicken is cooled, shred with two forks.
  4. In a large bowl, combine the shredded chicken with the bottle of Frank's RedHot. I used about half the bottle and continue adding until the chicken was well-coated.
  5. Heat the tortillas over a cooktop or grill until slightly crispy.
  6. Place all ingredients in the taco and squeeze lime juice over the top for added flavor. Add salt and pepper as desired.
Recipe Notes

Not sure how to serve at a party? Place all the ingredients in small bowls - it makes for the perfect taco bar!
