Easy Burrito Bowls

During the holidays, it’s important to come up with easy recipes that can feed a family. My latest and longtime obsession, along with avocado, is burrito bowls. Let’s be real, it’s not a recent obsession, it’s an ongoing thing that started with Chipotle and began in my own kitchen the day the E Coli news broke. That’s why I came up with this easy burrito bowl recipe.

Below, while not the prettiest burrito bowls out there, is a damn good easy burrito bowl recipe. Basically, you cook the chicken, rice, and beans separately and then put everything together in a bowl, similar to Chipotle’s assembly line and serve warm!

Now, my dad is pretty picky about guacamole but he liked this store bought brand – Good Foods! You can find it in local Sprouts and Walmart stores, but you can also find it with this store locator. We usually make our guacamole fresh, but if you just don’t have the time, this is the perfect substitute. They also have lots of other flavors other than the regular chunky like Pineapple Poblano and a southwestern style one! If you’re not going to make it fresh, Good Foods is the way to go! Besides, everyone loves guac 🙂

I hope you enjoy this easy burrito bowl recipe as much as we did! Even though it’s not super pretty, it does taste good!

Instructions
  1. Cook the rice in a rice cooker or steam in a small pot. I used one cup of dry rice to two cups of water.
  2. Boil the chicken until cooked and then shred with two forks.
  3. Mix the chicken, enchilada sauce, and whipping cream in a pot. Warm over medium heat until well-incorporated and warm enough to serve.
  4. Heat the black beans in a glass bowl in the microwave.
  5. Serve rice, beans, and chicken mixture warm in a bowl and top with fresh onions, sour cream, and Good Foods Guacamole.
