Immaculate Baking: Mini Apple Pies

Mini Apple PiesOne of the things I’ve been loving lately are miniature versions of anything. Another thing I always love are the flavors of fall: pumpkin pie, peach cobbler, cherry pie, apple pie… That’s why I am so excited to share this super easy mini apple pie recipe with you guys!

I used Immaculate Baking Pie Crusts and, damn, they are delicious! They cooked perfectly in my oven, even better than previous crusts I’ve used before! Immaculate Baking is actually a pretty neat brand: they focus on wholesome ingredients, which is probably why they taste so much better! I’ve actually been on a “let’s-finally-eat-whole-foods” kick lately (other than the entire bag of popcorn I just ate), so it’s pretty neat that this brand also offers a lot of gluten free and organic options! (That’s probably why they’re sold at Whole Foods and local health conscious grocery stores!)

The pie crust that I chose has no artificial ingredients, no bleached flour, no artificial preservatives, and no hydrogenated oils! Pretty cool, right! It really is “honestly delicious.” (PS: if you want more delicious Immaculate Baking Recipes just click here.)

Slicing the apples took the longest, but I decided to do it while watching Netflix a day in advance. I covered the apples with saran wrap in a large bowl and used them the very next day.

Putting them together was slightly more difficult than I expected, however, it worked just fine in the end. I cooked them for about twenty minutes and they turned out perfectly.

This would be the perfect treat to bring to any fall-themed get together, even a “friendsgiving!” I served them with vanilla bean ice cream, and everyone was wanting more! Maybe make a second batch for this one…

A super easy recipe for mini apple pies that will leave everyone wanting more!

Instructions
  1. Preheat the oven to 350 degrees snd spray two muffin tins with nonstick spray.
  2. Combine the filling ingredients (apples, sugar, flour, nutmeg, cinnamon, and lemon juice) in a large mixing bowl and stir until throughly mixed.
  3. Using a small glass, cut large circles from the pie dough until all the dough is used up.
  4. Layer the dough along the inside of the muffin tin, fill with apple filling, and cover with another crust or lattice top. (You may cut slits in these before placing on top as desired.) Repeat until all the dough and filling has been used up.
  5. Cook for 20-25 minutes or until the crust is golden brown on the top.
  6. Serve warm with vanilla bean ice cream! Enjoy!
