Let’s talk about Lent.

What does lent mean? Is it another go at that long-gone new years resolution? No, it’s 40 days (excluding Sundays) of giving up something you love and meatless Fridays all in the name of Jesus. Now, I actually am Catholic, born and raised (or should I say baptized and confirmed), so I really do know the meaning of Lent. This year, I’ve given up online shopping, which some of you may scoff at, but those of you that know me know that this is a really big deal. Last year, I gave up meat and got really really good at cooking vegetarian cuisine (y’all know I’m a foodie), but last year spring break happened over lent which was a real struggle. Since I’m going on a cruise this year for spring break, I didn’t really want to limit my food choices.

However, I still have meatless Fridays to consider. Cooking veggie cuisine can be very time consuming, which can be difficult for a busy bee like myself. One of my absolute favorite vegetarian meals is black bean burgers (my boyfriend hates when I call them “burgers”) but they can be really difficult to make from scratch. So, I went in search of a few products that are quick and easy to cook and easy to slide into to those meatless meals.

For this recipe, I got MorningStar Farms™ Spicy Black Bean Burgers, which are some of the best black bean burgers I have tried. They smell so good when you’re cooking them and I love how they tasted in this simple burger with a touch of my latin flair. Even better, I think these are less expensive than making the patties from scratch, which is unusual with vegetarian products. I can’t say how happy I am to have a wallet-friendly brand that makes tasty vegetarian options. MorningStar Farms products can be found at your local Wal-Mart, which is an easy stop on the way home for me. They’re in the freezer section, in my shop they were near to the fish, and you can pick everything else you need for this recipe up at Wal-Mart as well. I also loved the brioche buns I picked up from here in the marketplace section!

I tried to make my own Chipotle Aioli for the first time and I was actually quite happy with how it turned out. I may have gone a little heavy on the garlic, as I always do, but otherwise it was really tasty! Should you want your aioli to have a bit more flavor, feel free to add more chipotle powder than the recipe states! I also picked up the MorningStar Chik’n Nuggets because I was hungry when I was shopping at the store and they tasted pretty good with this chipotle aioli as well. I actually cooked this nuggets while I put this burger recipe together and ended up eating both, oh well!

All in all, this recipe was the perfect quick, easy, and tasty meal to make for meatless weeknight meals. It’s going to feed me for a few days, but could easily work as the perfect family meal for 4. Even my meat-loving boyfriend loved how this tasted, so I’m sure it would appeal to a lot of different taste palettes. This kept me full for hours too, so you will most definitely feel satisfied after this meal. Personally, I loved the spice, (the aioli isn’t too spicy) but if it seems a little too spicy for you, just remove the jalepeños or pick up the regular black bean patties as a substitute!

For the Aioli
  1. In a small bowl, combine the mayonnaise, chile powder, minced garlic, chives, and the juice of a small lime and stir with a fork until well incorporated.
  2. To taste, add salt and pepper.
For the Burger
  1. Toast the brioche buns in a toaster while prepping the rest of the ingredients. Spread the chipotle aioli on each side of the bun.
  2. Cook the patties in a small frying pan (without oil) according to package directions. Place the patty on the toasted bun.
  3. Slice the jalepeños into 6 slices each, removing all insides and seeds. Cook in frying pan until tender, about 2 minutes on each side.
  4. Place the pepperjack cheese on top of the patty to help it melt. Layer the onions, sliced tomatoes, sliced avocado, jalepeños, and lettuce on top of the rest of the burger and serve while warm!
