I will say, nothing says “date night” quite like Italian food. My other favorite thing about Italian food (other than the taste)? It saves well, makes a lot, and can feed you for at least two dinners for two or four dinners for one. It’s the college student dream: make a lot of good tasting food for cheap that you can eat for days.
My boyfriend and I picked up the ingredients at Safeway, drove home, and had dinner ready quite quickly and we were both impressed by how good it turned out. Now, we both like our food spicy and this most definitely had a kick to it. It wasn’t until later that we realized that we used both spicy sausage and spicy marinara.
The ingredients in this can be changed quite easily, but I loved these flavors together. We bought two bell peppers and used half of each one (one red and one yellow), a small container of mushrooms (we used half of the container, one whole red onion, one can of diced tomatoes (pre-seasoned with basil, garlic, and oregano), and one pound of spicy Italian sausage. We seasoned it with extra garlic, Italian seasoning, and salt. Last but not least, the spicy marinara sauce I bought from Mezzetta brought all the flavors together.
This Mezzetta marinara sauce is a real winner. I was pretty loyal to another brand, but after trying this sauce, I know I will be trying more flavors. All of Mezzetta’s sauces are made with fresh, all natural ingredients and tomatoes from Italy’s San Marzano region.
After the meat is browned, go ahead and add all the vegetables (not the tomatoes) and cook them with the sausage. It should only take a few minutes.
In a separate pan, cook the sauce, an extra teaspoon of Italian seasoning, another teaspoon of garlic, and the entire can of dices tomatoes. Don’t drain the tomatoes!
