So, here I am, back in the whole college grind and trying to make those cheap, tasty dinners I was once so good at. Normally, during the week, I’m covered by my sorority meal plan, but if I don’t make it to the grocery store on Friday, it looks like eating out the rest of the week for me. So I gave it the old college try with this recipe, combining basically all of my favorite things. (I also stocked up on mac n cheese and noodle cups, so I’m good just in case.)
So first comes the college student staple: pasta. A box of pasta costs under a dollar and feeds you for a whole week, so what’s not to love? Now, while I’ve been making some bomb healthy recipes lately, this is not one of them. This meal is carb-heavy. I’m not going to magically make the pasta better for you by masking it with vegetables, but it does taste good.
I (meaning my boyfriend), chopped up all the vegetables while I cooked the sausage and pasta. This did save us a bit of time.
After cooking the pasta and meat and once the vegetables were all chopped up, we layered all the ingredients in a
brownie casserole dish and cooked it for another 20 minutes while we watched Parks and Rec. Super easy.
If you like pizza and casserole, this is the best of both worlds. I’ve been eating for lunch all week and I’m still not tired of it either. Win, win.
