One of the things I’ve been loving lately are miniature versions of anything. Another thing I always love are the flavors of fall: pumpkin pie, peach cobbler, cherry pie, apple pie… That’s why I am so excited to share this super easy mini apple pie recipe with you guys!
I used Immaculate Baking Pie Crusts and, damn, they are delicious! They cooked perfectly in my oven, even better than previous crusts I’ve used before! I’ve actually been on a “let’s-finally-eat-whole-foods” kick lately (other than the entire bag of popcorn I just ate), so it’s pretty neat that this brand also offers a lot of gluten free and organic options! (That’s probably why they’re sold at Whole Foods and local health conscious grocery stores!)

Slicing the apples took the longest, but I decided to do it while watching Netflix a day in advance. I covered the apples with saran wrap in a large bowl and used them the very next day.
Putting them together was slightly more difficult than I expected, however, it worked just fine in the end. I cooked them for about twenty minutes and they turned out perfectly.
This would be the perfect treat to bring to any fall-themed get together, even a “friendsgiving!” I served them with vanilla bean ice cream, and everyone was wanting more! Maybe make a second batch for this one…
